![]() Passion for FoodFlo has 16 years experience in catering and started his career in a small Mexican restaurant in his home-town in Holland. The chef was Indonesian and here he learned the delicate secrets about using fresh and dried spices to flavour up the bland Dutch tongue. The restaurant proved to be very successful, and it was here that he developed his long standing passion with the Mexican culture. Not long after he finished college he decided to take his first trip to the ‘new World’ and experienced the ancient Aztec and Mayan flavours that would stick to him for the rest of his life. After coming back he decided to move to Ireland for unknown reasons and it was here on the Emerald isle that he met his Partner who originates from The Basque country in Spain. Soon after they met they decided to go to the ‘New World’ once again, this time to spend a lot more time. Flo found a job in a Restaurant to fund his travels and it was here that he perfected his skills. His passions have extended to the Iberian Peninsula where many traditional recipes were mixed with Mexican ingredients and loads of Spanish recipes actually originate from Mexico, to name but two ingredients: The Tomato and the Potato... He has since travelled the Iberian Peninsula and Northern Africa extensively and it was during these travels that his idea for the Falafel stall was brought to life.

Passion for Organic FarmingYears have passed since and The Gourmet Offensive is the result of its founder’s passion for spicy, unusual and passionate flavours. Another passion developed in Ireland which was the passion to grow foods on these amazingly (unused) fertile soils. The completion of the first garden was seen last year and many veggies and herbs were grown for the stall last year. This year’s garden has doubled in size so the future will continue to bring more and more home-grown produce. The Gourmet Offensive prides itself in encouraging organic growing in Ireland and tries to play its part in reducing its carbon emissions for a sustainable future for our kids. We are in the process of certifying our Falafel as officially organic by IOFGA. We now source as much of our Flat-Parsley herbs as possible locally by befriended growers in Galway. |
